Sriracha Teriyaki Meatballs over Rice – 30 Minute Meal

This recipe is a bit more detailed than the others that I’ve posted, but it was still made in under 30 minutes. And not only was it healthy and quick; if you’re looking for a dish with a BIG KICK, then this Sriracha Teriyaki Meatballs over Rice – 30 Minute Meal is perfect for you. This dish will serve 2.

Healthy 30 Minute Sriracha Teriyaki Meatballs Over Rice
Ingredients
Rice
For the Meatballs:
1 pound ground Turkey Meat
3 Garlic cloves, minced
1 large Egg
2 tsp fresh Cilantro, chopped
1 tbls Sriracha sauce
1 tsp Soy sauce
3 tsp fresh Ginger, grated
1 Scallion, white part only, minced
1 c whole wheat Panko Bread crumbs
1/2 tsp ground Black Pepper
3 tbls Oil (olive, vegetable, canola) for frying
For the Sriracha Teriyaki:
1/2 cu low sodium Soy Sauce
1/3 c raw Honey
1/2 c + 3 tbls Water, divided
2 tbls Sriracha sauce
2 1/2 tsp Cornstarch
2 tbls Sesame seeds
First things first – make your rice now, especially if it takes 20 minutes. Instant rice can be made towards the end.
INSTRUCTIONS
MEATBALLS:
Preheat oven to 400 degrees.
In a large bowl combine ground turkey meat, garlic, egg, cilantro, sriracha, soy, ginger, scallion, pepper, and breadcrumbs. In your hands, roll one heaping tablespoon sized round of meat into a small ball – this should make about 15 meatballs.
Fry meatballs in batches in the hot oil, 3-4 minutes on each side; or just until lightly browned. Place fried meatballs on a baking sheet lined with parchment paper and bake for 10-12 minutes, or until they’re cooked though.
While the meatballs bake, make your sriracha teriyaki.
FOR THE SRIRACHA TERIYAKI SAUCE
In a small saucepan combine the soy sauce, honey, 1/2 cup of the water, and sriracha sauce. Heat over a medium-low flame and stir constantly until the honey is dissolved; about 3 minutes..
In a small cup combine the cornstarch with the water, then pour it into the glaze. Cook the sauce until it thickens, constantly stirring, for about 2 minutes. Remove from heat and stir in sesame seeds.
TIME TO SERVE
Place 1/2 cup of rice on your plate. Top with a few meatballs, then top with the sriracha teriyaki sauce. Sprinkle sesame seeds onto (optional). Viola – dinner is served IN UNDER 30 MINUTES
