Spicy Peanut Chicken Recipe. If you’re looking for a quick and easy meal for dinner – one that is ready and on the plate in 30 minutes – then this one is for you. The dish has a nice bite to it, nothing mouth burning. However … if you’re looking for some real zing, then I would definitely add Sriracha Sauce.
This 30 Minute Meal – Quick Stir-Fry Dish can be served over white rice or with cooked soba noodles, which can be added to the mix after the broth sauce. Both ways are delicious. Enjoy 🙂

Spicy Peanut Chicken Recipe

Ingredients
1/2 c Chicken Broth
2 tbls Cornstarch
2 tbls Sugar
4 tbls Soy Sauce
2 tbls White Vinegar
1/4 tsp Cayenne Pepper
1 tbls Sriracha Sauce (OPTIONAL – FOR MORE HEAT)
1 tbls Vegetable Oil
1 pound Chicken breasts or thighs (boneless) cut into 3/4-inch pieces
1 Garlic clove, minced
1 tsp grated Ginger
1 med Red Bell Pepper, cut into 3/4-inch pieces
1 med Green Bell Pepper, cut into 3/4-inch pieces
1/2 c Cabbage, chopped
1 large Carrot, chopped
1/3 c Peanuts, (I used Cashews, halved)
2 medium Green Onions, sliced
Parsley to Garnish
Instructions
For the Sauce – Mix broth, cornstarch, sugar, soy sauce, vinegar, and red pepper in a bowl and then set aside. If you want it really spicy, now’s the time to add the Sriracha Sauce
Heat a large skillet over high heat, add the oil. Add the chicken, garlic, and gingerroot and stir-fry until the chicken is no longer pink in the center, about 3 minutes. Then add the peppers, carrots, onions, cabbage, and stir-fry for 1-2 minutes.
Add the sauce mixture to your skillet and cook about 1 minute, stirring consistently, until sauce is thickened. Add in the peanuts. Garnish with parsley.
Serve over rice. If you’re serving with Soba Noodles add the cooked noodles after the sauce has thickened.
