30 Minute Meal – Speedy Summer Pasta

Spicy Farfalle with Chicken and Veggies Recipe. If you’re looking for a quick and easy summer meal, one that is ready and on the plate in 30 minutes and with a bite – then this one is for you.

I found this recipe in an old Woman’s World Magazine and the original called for beef, yellow squash, and hot pepper rings – of which I had none. So I tweaked it a bit and oh boy – was this dish delicious.

The great parts about this Speedy Summer Pasta dish … it only calls for 6 ingredients plus herbs and spices AND it was ready in 30 Minutes. My kind of a meal – especially when the temps are a roaring 90 degrees outside.

So check out this healthy 30 minute meal and let me know what you think. My hubs loved it as it had quite the bite, (thanks to the can of tomatoes with chiles). If you don’t want it too spicy, then just use a can of diced tomatoes with spices. Enjoy 🙂

SPICY FARFALLE WITH CHICKEN AND VEGGIES – 30 MINUTE MEAL

Ingredients
8 oz. farfalle pasta
1 zucchini – cut into 1/4″ slices
1 lb pre-cooked chicken, cut into chunks
1 onion, chopped
1 can (14.3oz) diced tomatoes with chilies
1 c picked Brussels Sprouts (can substitute 1/2 c drained hot pepper rings – chopped)
2 tbls olive oil
3/4 tsp salt
1/2 tsp pepper
2 tbls fresh oregano, chopped

Instructions
In a large pot, cook the pasta according to the package directions. Drain and set aside

While the pasta is cooking, heat 1 tbls olive oil over medium heat. Add zucchini slices in a single layer and cook for 4-5 minutes, flipping them halfway through. You may have to do two batches. Remove from skillet and set aside

Heat the remaining 1 tbls oil over medium heat and add the onion, salt, and pepper. Saute for a couple of minutes until they’re semi-soft. Add the tomatoes with their juices and cook for 10 minutes or until all is thickened. Add the cooked chicken and the pickled brussels sprouts and heat thoroughly – should only take 4-5 minutes.

Then stir in the cooked zucchini and pasta. Add the oregano and heat all for 1 minute. Voila – dinner is served
