SOUTHWEST BREAKFAST SCRAMBLE
makes 4 servings 206 Calories, 5.3g carbs
INGREDIENTS
2 tbls Coconut Oil or Ghee
2 small or 1 lrg Bell Pepper, finely chopped
1/2 Onion, finely chopped
2 Roma tomatoes, seeded and finely chopped
8 Eggs
2 tbl Cilantro, coarsely chopped
1 tsp Celtic Salt
1/8 tsp Black Pepper
Pinch of Cayenne
1/8 tsp ground Cumin (optional)
pinch of Garlic Powder (optional)
INSTRUCTIONS
Mix the oil in a skillet over medium high heat. Add the bell pepper and onion and cook for five minutes, or until the vegetables are soft. Add the tomatoes and heat through, about two minutes. Whisk the eggs, cilantro, salt, black pepper, cayenne, Cumin, and garlic powder, in a medium bowl. Pour over the vegetables in the skillet. Mix with a spatula until the eggs are done to your liking.
Serve on a plate with some avocado and viola – DONE AND DELISH !!
