Guilty pleasures, as in Mocha Walnut Brownies, made without gluten and wheat? You betcha!! Found this out last night when I finally made Mr. Big that batch of brownies he’s been hounding me for (and I do believe this may have put me back in his good graces). Mocha Walnut Brownies that were not too heavy so even I could enjoy one, and not too rich that my man could eat to his hearts desire. What’s not to love?
Check it out – they only took a total of 10 minutes to whip together and 25 minutes to bake; and 285 calories a serving isn’t much to balk at either.

GLUTEN AND WHEAT FREE MOCHA WALNUT BROWNIES
Makes 12
Ingredients
8 oz bittersweet (85% cacao) chocolate, chopped
3/4 cup butter
2 tsp instant espresso powder
1/2 tsp liquid stevia
4 eggs
1/4 cup canned coconut milk
2 tsp vanilla extract
1/2 cup chopped walnuts
2 tbls coconut flour
1/4 cup ground golden flaxseeds
Cooking Instructions
Preheat the oven to 350°. Grease a 9″x9″ baking pan.
In a large bowl, combine the chocolate and butter. Microwave on high power for one minute, stirring once halfway through the cooking time. If not completely melted, microwave, stirring every 20 seconds, until melted. Stir in the espresso powder until completely melted. Add the eggs one at a time, blending well after each egg. Stir in the coconut milk, vanilla and stevia.
Stir in the walnuts, coconut flour, and flaxseeds until well blended. Pour into the pan and bake for 25 minutes, or until a wooden pick inserted in center comes out clean.
