Middle Eastern Meatballs
Low Cal and Low Carb Lunch – 228 Calories 1.7g Carbs
Middle Eastern Meatballs. Low-calorie low-carb lunch meal for the bone broth diet. These meatballs were absolutely delicious and perfect when I paired them with roasted asparagus. What was great about this meal is it didn’t get me stuffed, but was just enough to fill me up at lunch. Made with ground turkey, egg, onion, garlic, and many herbs – 228 calories and 1.7g carbs.
Middle Eastern Meatballs
makes 4 Servings 228 calories 1.7g Carbs
INGREDIENTS
1 1/4 lb ground turkey
1 egg
1/2 onion, finely chopped
1/4 c chopped fresh cilantro
1 garlic clove, minced
1 tsp ground cumin
1 tsp paprika
1/4 tsp ground cinnamon
1/2 tsp ground coriander (optional)
1/2 tsp salt
1/4 tsp black pepper
INSTRUCTIONS
Preheat the oven to 425°. Line a baking sheet with parchment. In a large bowl mix the turkey, egg, onion, cilantro, garlic, cumin, paprika, cinnamon, coriander (if using), and salt and pepper. Form into golf ball size meatballs and place on the prepared baking sheet. You should end up with about 15 meatballs.
Bake 425° for 10 minutes. Reduce the heat to 350 and bake for 15 to 20 minutes more, or until an instant thermometer inserted in the center, registers at165° and the meat is no longer pink.
Serve with either roasted vegetables (click the link for recipe), roasted asparagus, or a large garden salad. I had mine with roasted asparagus – yum yum Yummy 🙂
