Armchair traveling isn’t only about fine wine and tasty spirits, it’s also about delicious cuisine and yummy desserts. And today we’re featuring the traditional Quebec maple syrup dessert called Maple Pouding Chomeur. First introduced during the Great Depression, this dessert is also known as the “poor man’s pudding”. The dessert featured at the Fairmont Le Chateau Frontenac, comes from Chef Jean Soulard, with his recipe shown below. Enjoy and happy eats !!
MAPLE POUDING CHOMEAR
INGREDIENTS
1 cup all purpose flour
1 1/2 tsp baking powder
1/8 tsp salt
1/2 c sugar
1 tbs shortening
1 egg
1/3 cup milk
1 c maple syrup
3/4 c water
2 tsp butter
1/2 c sweetened coconut flakes
DIRECTIONS
prehead oven to 350 F. Butter an 8″ square baking pan. Mix flour, baking powder and salt in a bowl and set aside. Beat sugar and shortening in another bowl, then beat in egg. Alternately beat in milk and flour mixture until stiff batter forms. Spread in pan. In a pot, mix syrup and water, bring to a boil. Remove from heat; stir in butter. Slowly pour over batter dough, sprinkle with coconut. Bake 35 minutes.
