Minestrone – The Longevity, Fountain of Youth Soup Inspired from the Italian Island of Sardinia

MINESTRONE – LONGEVITY SOUP
INGREDIENTS:
1 can (19 oz) white beans or fava or chickpea beans
2 tbs olive oil
1 chopped medium onion
2 tsp minced garlic
2 medium potatoes cut into small chunks
2 carrots cut into medium chunks
2 ribs of celery and fennel, sliced
1 can (28 o) crushed tomatoes
1-2 cups cooked pasta
1/2 cup chopped FRESH herbs, basil or Italian parsley
salt and pepper
grated cheese
DIRECTIONS:
Drain the beans, reserving the liquid. In a large pot, heat oil over medium-low heat. Add onions and garlic, cook – stirring until onion is tender. Stir in potatoes, carrots, celery and fennel – cook for 2 minutes. Add tomatoes and reserved liquid. If necessary add enough water so liquid in pot covers vegetables. Cover and bring to a boil. Reduce heat to low and cook until vegetables are very tender. Stir in pasta, herbs and beans – cook until flavorful and heated through. Season with salt and pepper. Serve with cheese. YUM YUM
