1 cup spinach, chopped
1 medium carrot, chopped
½ tsp dried thyme
½ tsp dried oregano
½ tsp salt
¼ tsp black pepper
¼ tsp red pepper flakes (optional for heat)
For the Roasted Carrots:
2 medium carrots, sliced into sticks
1 tbsp olive oil
½ tsp salt
¼ tsp black pepper
½ tsp garlic powder
½ tsp smoked paprika
INSTRUCTIONS
Prepare the Soup:
