Low-Calorie Low-Carb Meals for Bone Broth Diet. I was pretty excited about sharing the dishes I had planned for today as every one of them were simple to make and filled me up after eating … all while being Low-Calorie and Low Carbs Meals Fit for a Queen.

* Breakfast – Baked Egg Cups with Spinach
* Lunch – Middle Eastern Meatballs
* Dinner – Roasted Chicken with Roasted Vegetables
* Snack – 1 c warm Chicken Bone Broth

Day 12 Meals Fit For a Queen

Baked Egg Cups with Spinach
3 Servings – 161 calories 3g carbs

INGREDIENTS
1 tbls coconut oil, melted
1 scallion, white and green part chopped
1 + 1/2 handful of fresh spinach, chopped
6 eggs
salt
pepper
1/8 tsp nutmeg

INSTRUCTIONS
Heat oven to 350° and brush 6 cups in muffin or cupcake tins

Equally divide the scallions and spinach into the tins. Press down so the spinach doesn’t hang out over the tin sides. Drop an egg in each tin if wanting a cooked whole egg, or scramble up the eggs and equally divide among each tin. Spring with generous salt and pepper and with a splash of nutmeg (totally optional).

Bake for approx 20 minutes for the scrambled eggs and approx 23 minutes for the whole egg, depending on how you want them. I chose to have mine thoroughly cooked so 23 minutes was perfect. If you want somewhat of a runny yolk, check the oven after 18 minutes.

Serve on a plate and viola – DONE AND DELISH !!


Middle Eastern Meatballs

Middle Eastern Meatballs
makes 4 Servings 228 calories 1.7g Carbs

INGREDIENTS
1 1/4 lb ground turkey
1 egg
1/2 onion, finely chopped
1/4 c chopped fresh cilantro
1 garlic clove, minced
1 tsp ground cumin
1 tsp paprika
1/4 tsp ground cinnamon
1/2 tsp ground coriander (optional)
1/2 tsp salt
1/4 tsp black pepper

INSTRUCTIONS
Preheat the oven to 425°. Line a baking sheet with parchment. In a large bowl mix the turkey, egg, onion, cilantro, garlic, cumin, paprika, cinnamon, coriander (if using), and salt and pepper. Form into golf ball size meatballs and place on the prepared baking sheet. You should end up with about 15 meatballs.

Bake 425° for 10 minutes. Reduce the heat to 350 and bake for 15 to 20 minutes more, or until an instant thermometer inserted in the center, registers at165° and the meat is no longer pink.

Serve with roasted vegetables (check out the recipe below), roasted asparagus, or a large garden salad. I had mine with roasted asparagus – yum yum


Chicken with Roasted Vegetables
Makes 4 serving – 387 calories, 21g carbs

INGREDIENTS
Chicken pieces (thigh, breasts leftover from Chicken Broth Makings, cube
1/2 Butternut Squash, skinned and cubed
1 Sweet Potato, cubed
4 Carrots, chopped
1/2 Onion
1 Zucchini, sliced into rounds
1 Green Pepper, cubed
2 tbls Italian Seasoning
2 tbls Oil

INSTRUCTIONS
Preheat oven to 375° and line a flat roasting pan with parchment paper. Prepare all vegetables and meat. Then ONLY add the vegetables to a zip lock bag. Drop in the oil and Italian seasoning and shake until everything is completely covered.

Place entire bag of vegetables onto the roasting pan and cook for 30 minutes.

During this time, add the chopped chicken into the zip lock bag and give it a good coating with remaining oil and spices – set aside.

After 30 minutes of the vegetables cooking, flip them and place back into oven for another 15 minutes, so all sides get evenly browned. Remove roasting pan with vegetables and add the cooked chicken that’s been sitting in the bag of herbs and oil.

Place back in the oven and cook for another 15 minutes. The dish is ready when the butternut squash and carrots are soft as all other vegetables fall in cooking line after those two. The total cooking time usually takes about 1 hr and 15 minutes.
