Kale And Mango Breakfast Smoothie.  Let’s talk about a Kale Smoothie – one that’s Healthy And Delicious.  So if you planted Kale in your garden this spring, and planted an over-abundant of them like I have, then you’re going to need something to do with all these wonderful healthy kale leaves as one cannot live on salads alone.   You can make kale chips, (check out these 3 Kale Chip recipes), and you can also make Green Smoothies – Kale Smoothies to be exact.  Once you add in all the other fruits and vegetables into the mix, not only are you getting a chockful of nutrients and vitamins (including all their benefits), you’re also getting a healthy, filling breakfast or even a late afternoon snack.  And most importantly … one that tastes delicious.

INGREDIENTS

  • 2 cups chopped kale
  • 1 1/2 cups frozen mango chunks
  • 2 pitted medjool dates
  • 2 tbls chia, flax or hemp seeds
  • 2 tbs lemon juice
  • 1 C water
  • fresh ginger (totally your call)

DIRECTIONS

In the order listed in the recipe, throw everything into the blender. Blend all of the ingredients until smooth. You can add more water if it’s too thick. Blend until you reach your desired consistency! Pour into glasses and serve immediately.
