Instant Pot Sweet and Sour Chicken With Rice – A 30 Minute Meal. While the house is being renovated, cooking meals has been reduced to an instant pot and a griddle. And I have to say you never realize how much you miss pots and pans, especially when it comes to making simple rice. So creativity is a must when everything has to be cooked together.

But today I tried my hand at Sweet and Sour Chicken with Rice in the Instant Pot. And you know what? It turned out really good and was quick and easy to make. My kind of meal !!

INSTANT POT SWEET AND SOUR CHICKEN WITH RICE
Instant Pot Sweet and Sour Chicken With Rice
makes 4 servings
INGREDIENTS
1 large Chicken Breast (fillet in half, then cut into bite size chunks)
1 Red Pepper (cut into chunks)
1 Green Pepper (cut into chunks)
3 Pineapple rounds (fresh pineapple – cut into chunks, core omitted)
1 Yellow Onion (cut into chunks)
1 c White Rice
1 14.5 oz jar Sun Luck Sweet & Sour Sauce or make your own sauce (recipe below)
1 c Water
1 tbls Olive Oil
Salt & Pepper
1/2 tsp Ground Ginger
DIRECTIONS
Add the olive oil to the instant pot and turn it to saute. Add in the chicken chunks, season with salt and pepper, and saute, turning a few times so all sides of the chicken brown.
Add the peppers, onion, pineapple, rice, and then season with the ground ginger. In a glass or bowl, mix the Sun Luck Sweet & Sour Sauce with the water, and then pour over the ingredients in the instant pot. Give it a mix.
Close the Instant Pot lid, making sure the vent is in the sealed position, and cook on HIGH pressure for 5 minutes. Once done, let the pressure naturally release for 5 minutes then quick release to finish releasing the pressure.
And BOOM – dinner is done
SWEET AND SOUR SAUCE
If you’d rather make your own Sweet and Sour Sauce, here’s the recipe to follow:
2 c Water (need the extra cup for the rice to cook properly)
1 c white sugar
1 c ketchup
1 8 ounce can crushed pineapple, undrained
1/3 c distilled apple cider vinegar
1 tsp red pepper flakes
1 tbls soy sauce
1/2 tbls worcestershire sauce
1/2 tbls hot sauce
3 tbls cornstarch
Wisk all together (less the cornstarch), retain 1/4 cup of the sauce, and set side. Add the remaining sauce to the chicken, vegetables, and rice, and mix together. Cook as instructed above. Once the meal is done cooking in the instant pot, take the 1/4 cup of sauce and whisk the cornstarch to it. Turn the Instant Pot to saute and pour the remaining sauce into the pot and stir until the sauce thickens.
