Instant Pot Poor Mans Stew aka Hamburger Stew, from prep to plate in under 30 minutes. A delicious, quick and easy meal that won’t break the budget either. It’s made with ground beef, potatoes, carrots, onion, garlic, stewed tomatoes, beef stock and plenty of spices. I’m not one to enjoy really hot foods, but if you’re looking to give it a kick – add a jalapeno. What’s great about this recipe is it’s on your plate in 30 minutes. Ya can’t get any better than this. I made it last night and the boy’s were very pleased. Enjoy 🙂
INSTANT POT POOR MAN’S STEW
Ingredients
1 lb ground beef browned and drained
6 medium potatoes diced large (I don’t peel, but you could)
4 medium carrots roughly chopped
1 medium onion chopped
2 garlic cloves minced
2 14 oz cans stewed tomatoes
1.5 cups beef stock can sub chicken broth
1.2 C water
1.2 tsp salt
1 tsp cracked pepper
2 tsp onion powder
2 tsp garlic powder
2 tsp dried oregano
2 bay leaves
1 jalapeno pepper if you want a BITE !!
Instructions
Add to the instant pot: the browned ground beef, potatoes, carrots, onion, and garlic.
Then add the stewed tomatoes, beef stock, water, and all spices.
Seal the instant pot with the lid, cook on high setting or meat/stew setting for 13 minutes. Manually release the pressure and boom – dinner is ready.
No soggy potatoes or mushy veggies. So easy and so good.
