30 Minute Meal – Provolone, Pepper Jack, and Mozzarella Cheese Pizza with Olives

Homemade 3 Cheese Pizza – Wheat and Gluten Free. Never having made my own pizza before, let alone the crust, I thought for sure this was going to be a daunting task. But oh contraire, this was so not the case. This is one of the easiest pizza’s … ever !! But I will say the trick to making this a quick 30 minutes meal is to make sure you have the All-Purpose Baking Mix (see recipe below) pre-made and on hand. And you guessed it – I’ve got a big container of the mix ready and waiting to go.

So check it out and try your hand at making it for lunch or dinner. It only takes a total of 30 minutes to mix, shape and bake. But don’t let its looks deceive you – this puppy is very filling. It only took 3 slices each to fill up me and Mr. Big. Plus … it’s gluten and wheat free. What’s not to love? Enjoy 🙂

Homemade 3 Cheese Pizza – Provolone, Pepper Jack, Mossarella Cheese and Kalamata Olive Pizza

Ingredients

Pizza Crust
2 1/2 c All purpose Baking mix (see below)
1/2 c shredded Mozzarella Cheese
1 Egg
2 tbls extra virgin Olive Oil
1/2 c Water

Topping
2 oz Provolone cheese, cut into cubes
1/4 c Shredded Mozzarella Cheese
1/4 c Pepper Jack Cheese
2/3 c Pizza sauce
1/2 c pitted Kalamata Olives, sliced
1 tsp Red-pepper flakes

Instructions
Preheat the oven to 400°. Line a baking sheet or pizza pan with parchment paper. To make the crust; in a medium bowl, combine the baking mix and cheese. In a small bowl, mix together the egg, oil, and water. Pour into the flour mixture and combine thoroughly.

Lay the dough on the baking sheet or pizza pan and, with moistened hands, press into a 12 inch circle, forming an outer edge. Bake for 10 minutes. Reduce the heat to 350° and remove the pizza crust.

To make the topping – combine the provolone, pepper jack and mozzarella cheeses in a small bowl.  Top the pizza crust with the sauce.  Then add the cheese mixture, olives, and pepper flakes, if desired. Bake for 10 minutes or until the cheese melts.

All Purpose Baking Mix

4 c Almond meal/flour
1 c ground Golden Flaxseeds
1/4 c Coconut Flour
2 tsp Baking Soda
1 tsp ground Psyllium seed (optional)

In a large bowl, whisk all ingredients together; and then store in an airtight container, preferably in the refrigerator.
