INGREDIENTS

For the Grilled Shrimp:
12 oz large shrimp, peeled and deveined
1 tbsp olive oil
1 tbsp lemon juice
1 tsp garlic powder
½ tsp smoked paprika
½ tsp salt
¼ tsp black pepper
¼ tsp red pepper flakes (optional)
1 tsp fresh parsley, chopped (for garnish)

For the Cauliflower Rice:
2 cups cauliflower rice (fresh or frozen)
1 tbsp olive oil
1 clove garlic, minced
½ tsp salt
¼ tsp black pepper
¼ tsp turmeric (optional for color and anti-inflammatory benefits)

For the Roasted Brussels Sprouts:
2 cups Brussels sprouts, halved
1 tbsp olive oil
½ tsp salt
¼ tsp black pepper
¼ tsp garlic powder
¼ tsp smoked paprika

INSTRUCTIONS
Preheat your oven to 400°F (200°C).

Toss Brussels Sprouts with olive oil, salt, black pepper, garlic powder, and smoked paprika. Spread evenly on a baking sheet and roast for 18-20 minutes, flipping halfway through, until caramelized and crispy on the edges.

Cook the Cauliflower Rice: Heat 1 tbsp olive oil in a large skillet over medium heat. Add minced garlic and sauté for 30 seconds until fragrant. Stir in cauliflower rice, salt, black pepper, and turmeric. Cook for 3-5 minutes, stirring occasionally, until the cauliflower is tender but not mushy. Remove from heat and set aside.

Grill the Shrimp: Preheat a grill pan or outdoor grill to medium-high heat. In a bowl, toss shrimp with olive oil, lemon juice, garlic powder, smoked paprika, salt, black pepper, and red pepper flakes. Grill the shrimp for 2-3 minutes per side, until opaque and slightly charred. Remove from heat and garnish with fresh parsley.
