1 cup butternut squash, peeled and diced
1 tbsp olive oil
½ tsp salt
¼ tsp black pepper
½ tsp garlic powder

For the Sautéed Spinach:
2 cups fresh spinach
1 tsp olive oil
1 clove garlic, minced
¼ tsp salt
¼ tsp black pepper
INSTRUCTIONS
Roast the Butternut Squash: Preheat your oven to 400°F (200°C). Toss butternut squash with olive oil, salt, black pepper, garlic powder, and cinnamon. Spread evenly on a baking sheet and roast for 20-25 minutes, flipping halfway through, until caramelized and tender.
