Easy Shrimp Egg Foo Young – Variation
makes 2 Servings – 244 calories 8g Carbs

INGREDIENTS
2 tbsp Olive Oil – divided
1 c small Shrimp, tail-off, shelled and deveined, cut in half
1/2 sm Onion, diced
3/4 c Mushrooms, chopped
1/2 c Peas
1 tsp Black Pepper
4 small Eggs (whisked) + 3 tbls water

INSTRUCTIONS
Add oil to a frying pan (preferable a wok), and heat over medium-high heat. Add the shrimp and cook until slightly pink. Then add the diced onions and continue to cook for 1 to 2 more minutes, stirring continuously until slightly softened. Add the mushrooms and stir. When the mushrooms have started to soften, add the peas along with the black pepper. Stir-fry for another minute. Using a slotted spoon, remove the ingredients from the pan.

Wisk the four eggs together and add the 3 tbls of water. Mix together. Add the shrimp, onion, mushroom, and pea mixture to the eggs and mix all together.

I remember going to the Chinese Restaurant when I was young and when we would get egg foo young they were always shaped like patties. So I am going to make the egg foo young here into 4 separate patties as well – meaning I’ll have to do this next step four times.

Add a splash of oil to the hot pan and back onto a burner over med heat. Add 1/4 of the egg mixture to the pan and cook until the egg is set. With a spatula, flip the egg patty over and cook another 1-2 minutes, until the patty is set. Remove the patty from the pan and place it on a serving plate. Repeat the process 3 more times. NOTE: you may need to add another drizzle of oil by the time you’re ready to cook the 3rd patty as the pan may be getting dry – I had to.

Divide the patties onto two plates, garnish with chopped scallions if you’d like. I didn’t with mine and it was still really, really good. I will definitely make this one again.
