Creamy Avocado Tomato Soup for a Quick Cold Recovery

MAKES 6 SERVINGS
INGREDIENTS
1 tbls Olive Oil
3/4 c Onion, chopped
2 Garlic Cloves, minced
3 c Chicken Broth
1 can (28 oz) Dice Tomatoes
2 tbls Tomato Paste
2 tsp Sugar
1/2 tsp Salt
1/2 tsp Black Pepper
1/2 tsp Dried Thyme
2 Avocados, peeled, laved, and pitted
Fresh Basil for taste
DIRECTIONS
In a large pot, heat the oil over medium heat – then add the onion and cook until translucent (about 5 minutes). Add the garlic and cook for one minute. Stir in the broth, tomatoes and their juices, tomato paste, sugar, salt, pepper, and thyme. Bring the soup to a boil over medium heat. Reduce the heat and simmer for 5 minutes.
Remove the pot from the heat and let it cool for approx 10 minutes. Cut both avocados into cubes, (or use 1-1/2 avocados and save the other half to garnish) and add to the tomato soup. Scoop some soup into your blender (work in batches), and puree until smooth. Add the soup back to your pot and reheat.
Serve soup in bowls and garnish with basil. If you’ve left out half of an avocado, garnish the top of your soup with the remaining avocado. Simply delish !!
