No Brown Sugar or Baking Soda? No Problem
Chocolate Chip Cookies Without Brown Sugar. This weekend was filled with watching my 2 grandkids while their parents went off for a 5 day getaway. And I promised my 4yr old grandson that we would make chocolate chip cookies while they were gone.
First day and first attempt to gather ingredients – no brown sugar. Arghh. Had to tell the little we’d have to wait until after we go the store. He was very patient. But I really didn’t feel like loading them both into the car just for a grocery run, so I opted to scour the internet for a recipe that omitted brown sugar. Found a few, whew.
Second day and second attempt at gathering ingredients – no baking soda. WTH !! Had to once again tell the little we’d have to wait on the cookies until I could find a recipe without baking soda. Once again he was very understanding and patient.
NO BROWN SUGAR OR BAKING SODA? NO PROBLEM
I couldn’t find a recipe that had both brown sugar and baking soda omitted from the ingredient list, so I just thought I’d be a little creative and try some mixes of my own. While the two grandkids were asleep for the night, I tried the recipe below.
Made one small batch to try it out and dang – these cookies came out superb. They were soft and fluffy and didn’t flatten out. And boy were they good. And the secret to this was – LET THE DOUGH SIT IN THE REFRIDGERATOR FOR A FEW HOURS. Mine was kept in all night because it was already 11pm.
So at 7am, I woke my little guy up for school, got him washed and dressed, he had a bowl of cereal for breakfast, and then I surprised him with LET’S MAKE SOME COOKIES !! He was so happy. And even happier that I let him eat 2 cookies before heading out the door.

Chocolate Chip Cookies Without Brown Sugar
Chocolate Chip Cookies Without Brown Sugar Recipe
Makes 2-3 dozen
Ingredients
3/4 c Butter (1 stick and 1/2 of another)
1 c white granulated Sugar
1 Egg
1 tbls Vanilla
2 tsp Baking Powder
1/2 tsp Salt
1-3/4 c all purpose Flour
1/2 – 3/4 c Chocolate Chips
Instructions
Oven temp 350°
Mix together the dry ingredients – the baking powder, salt, and sifted flour, and set aside.
In your mixer bowl (I use the one from the KitchenAid), blend together at a low speed the butter and granulated sugar for about 30 seconds. Mixing any longer may result in flat cookies. Then drop in the egg and vanilla and mix again for no longer than a minute. Add the dry ingredients and mix until a dough consistency. Then blend in the chocolate chips.
For thicker fluffier cookies, let the dough sit for a few hours in the refrigerator, or better yet overnight.
When ready to bake, preheat your oven to 350°. Using a nonstick cookie sheet, drop a tablespoon of dough onto your sheet and bake for 10 minutes. Remove the cookie sheet from the oven and you’ll see that the outsides of the cookies will be a tad brown and the insides will be a light color. Don’t worry. Just let the cookies sit on the cookie sheet, outside the oven, for another 5 minutes to finish cooking.
Remove and place in a storage container (don’t forget to eat one first), and repeat the above for another batch.
