Chicken Spinach Parmesan In Under 30 Minutes. Another simple dish to make in under 30 minutes and perfect for those nights when you’re pressed for time. Serve over spaghetti noodles, or my favorite … spaghetti squash, with a salad and some bread as a side. This recipe will serve 2. But better yet – make it for yourself and you’ll have enough for tomorrows leftovers.

Chicken Spinach Parmesan in Under 30 Minutes

Serves 2

Ingredients
1 thick Chicken breast, fillet into 2 slices (or 2 breasts fillet into 4 slices)
1/4 c Bread crumbs
1/4 c grated Parmesan cheese
4 Tbls extra virgin olive oil
12 oz your favorite pasta sauce
1/2 c chopped baby Spinach
1/2 c grated Mozzarella Cheese

Directions
Season chicken with salt and pepper. Combine bread crumbs and parmesan cheese in a small bowl. Coat the chicken with the bread crumb mixture pressing gently to adhere.

Heat 2-3 tablespoons of olive oil in a skillet over medium-high heat. Add the cutlets and cook 3-4 minutes on each side until golden brown and cooked through.

Remove chicken from skillet and pour half of the pasta sauce onto the bottom of the skillet. Gently lay the chicken on top of pasta sauce and top each piece of chicken with a couple tablespoons of sauce, chopped spinach, and two tablespoons of mozzarella. Cover the pan and cook for 5 minutes.

Easy breezy. Serve over pasta or a bed of spaghetti squash (my favorite), along with bread and salad. DONE – VIOLA !! Dinner on the table in under 30 minutes.
