Preheat oven to 350.
In a large pot, over medium-high heat, brown the ground beef and onion. Drain if necessary. Stir in 3/4 can of crushed tomatoes, salt and pepper, thyme, water, and coleslaw. Reduce the heat to medium, cover, and simmer for 15 minutes. Remove the cover and cook for additional 5-10 minutes until most of the liquid is reduced. Remove from heat.
In the meantime, bring a large pot to a boil. Remove (cut) the core of the cabbage head and blanch the entire head for 3 minutes. This helps to soften and remove the leaves intact. Remove 8 outer leaves, set them aside, and let the remaining head of cabbage cool so it can be safely stored in the fridge.
Scramble the egg in a small bowl, then mix in the lupin. When the beef mixture is done, add the egg and lupin to the beef pot and mix everything together.
Line the bottom of a casserole dish with the remaining 1/4 cup of crushed tomatoes. Working on a plate or a cutting board, take one cabbage leaf and add a good heaping spoonful of the beef mix to the center. Fold the ends and wrap them into rolls. Place each roll, folded sides down, in the casserole dish.
Bake stuffed cabbage rolls for 45 minutes.

In a large skillet, heat the olive oil over medium heat. Add the garlic and onions, season with salt and pepper, and saute until carrots are soft (5-10 minutes).
