Day 6 Of The Bone Broth Diet – Leftover Omelet
Best Bone Broth Meal Replacements. So here I am on Day 6 of the Bone Broth Diet, which was suppose to be a day of fasting. However I just couldn’t shake the fact that I wanted something to gnaw on. So at noon I had a few grapes just to hold me over, which turned out to be a BIG MISTAKE as it went downhill from there fast.
Mainly because my chicken broth was done cooking and just staying warm in the slow cooker waiting to be strained. And once I did that, there laid in front of me all the goodies from the broth. Well you know how I feel about letting good food go to waste – I JUST DON’T !!
So needless to say, tomorrow will be my day of fasting and here was my menu for today. One of my favorite dishes to make for the hubs and me was what we would call A MOMLET, which was simply last nights leftovers laid between eggs and made into an omelet. Pretty sure the hubs loved them as he only complained once – and that was when I made my Momlet with leftover brussels sprouts 🙂
Day 6 Menu
* Breakfast – 1 c warm Chicken Bone Broth
* Late Breakfast – handful of grapes, bits of chicken from the broth makings.
* Lunch – Leftover Jambalaya Omelet (yes, I still have leftovers), 1 Avocado
* Dinner – Chicken Legs, Wings, and Carrots from Bone Broth
* Snack – 1 c warm Chicken Bone Broth

LEFTOVER JAMBALAYA OMELET
Makes 1 Serving 506 calories, 12 carbs
INGREDIENTS
3 Eggs
1/2 tsp Celtic Salt
1/8 tsp ground Black Pepper
1/2 c warmed Leftover Jambalaya
1/2 Avocado, pitted and sliced
DIRECTION
Whisk the eggs in a medium bowl and add salt and pepper. Spray or brush a non-stick skillet with coconut oil and heat over medium heat. When the pan is hot, pour in the egg mixture and cook evenly for about 3 to 5 minutes, making sure there’s no runny eggs in the pan. Add the warmed leftover jambalaya mix to half of the omelet, fold over and continue cooking for another minute. Flip the omelet over and cook the other side.
Serve with sliced avocado
Well day 6 of dieting is now complete. I feel fully satisfied with the meals and not stuffed. Am making tomorrow my day of fasting, which should go a lot easier as I’ve got a full day planned, will be on the go, which should keep my mind off of food.
