OKRA
Okra contains glutathione, the most important antioxidant in the body. It supports the immune system, in partical lymphocyte immune cells. It also helps the liver to detoxify chemicals.
Okra is a high fiber food. 1 cup, only 35 calories, provides 4g of fiber and 3g of protein. Its high in calcium, magnesium, potassium, vit A and K, and folic acid.
All recipes has some great ways to cook Okra one of which is roasting them, or perhaps as featured at the Spruced Eats you can saute them in garlic. Both make superb side dishes.
ONIONS
Onions (and other members of the allium family, garlic, scallions, chives & shallots, leaks) are a cancer fighting food. They protect against stomach cancer, and lowers the risk for prostate cancer, and the same with esopageal cancer. Onions contain diallyl sulfide, which increases the body’s production of the cancer fighting enzyme glotathione-s-transferas.
They help build strong bones, having a compound in them that inhibits the activity of the cells that break down bones.
Onions contain antioxidants and are anti-inflammatory, antibiotic and antiviral. Contain quercetin, and anti-inflammatory compound that has beneficial effects on chronic diseases like cancer and heart disease.
Quercetin can help relieve asthma and hay fever by blocking the inflammatory responses in the airways. Onions also have a number of sulfides which may lower blood lipids and blood pressure.
The type of onion affects the content of the health promoting chemicals, and the stronger tasting ones have superior properties.
So give it a try – add these wonderful healthy veggie’s into your next dish 🙂
