LEEKS
Sweeter than an onion. The active ingredient includes allyl sulfides, which help provide protection against cancers. Regular consumption of allium vegetables (onions, garlic, shallots), are associated with a reduced risk of both prostate and colon cancer. The sulfides also decrease the tendency of blood clots to form, hence also reducing the risks of strokes and cardiovascular events. They also lower the levels of LDL’s.
They’re a good source of the eye nutrients lutein and zeaxanthin, and when working together have shown to help in preventing macular degeneration and cataracts. Only 1 leek contains 1691 of these cartenoids. They also contain fiber, calcium, iron, magnesium, phosphorus, potassium, vitamin K and more than 1400 IU’s of vit A.
