KALE
Because its a cabbage, kale has more benefits than its antioxidant power alone would indicate. It contains phytochemicals like cancer fighting indoles, that have been found to protect against breast, cervical and colon cancer. Kale is high in sulfer and contains sulforapahen, which helps boost the bodys detoxification enzymes and may help fight cancer as well. When chewed, it triggers the liver to remove free radicals and other chemicals that may cause damage. It has been noted that sulforaphane helps stop breast cancer proliferation.
Kale is loaded with calcium, iron, vit A & C, bone building vit K, contains 7x the beta carotene of broccoli, and 10x as much lutein and zeaxanthin carotenoids known to help protect against macular degeneration. 2 cups contains 4g of protein and 3g of fiber. As you can see it’s called KALE IS KING for a reason.
KOHLRABI
A member of the cabbage family, the stem can be crisp and juicy, and almost as sweet as an apple, similar to a turnip in taste. They are either green or purple (purple is a bit more spicier).
Kohlrabi contains fighting indoles, sulforaphane and isothiocynates. 1 cup has 83m of vit “C and 472mg of potassium, 5 g of fiber, and is only 36 calories per cup.
