Chorizo And Gnocchi In Under 30 Minutes. A quick, easy and simply delicious Chorizo and Gnocchi dinner dish for two. And what makes this dish even better – it’s ready to serve in under 30 minutes (this actually took me a total of 20 minutes). Serve the meal with a side of spaghetti squash and top with shavings of Gouda cheese … DELICIOSO !!
Chorizo and Gnocchi with a side of Spaghetti Squash
Makes 2 Servings (video here)
INGREDIENTS
16 ounces Potato Gnocchi
1/2 pound fresh Chorizo, casing removed
3/4 c chopped, jarred Roasted Red Peppers
1 small Onion, chopped
1 1/2 to 2 c chopped Spinach
1/2 Spaghetti Squash
Gouda Cheese (topping – optional)
DIRECTIONS
Place your spaghetti squash (cut side down) on a paper towel lined plate. Stab the shell with a fork just like you would with a baked potato. Cook in microwave on high setting for 10 minutes. The shell should be soft – if not, cook for another 2-3 minutes.
Add the gnocchi to a pot of boiling water and cook for approx 4 minutes or until they float to the top. Drain and set aside.
Over medium high heat begin cooking the chorizo. Half way thru add the onions and cook for 5-7 minutes until the onions are soft. Mix in the roasted red peppers and cook for an additional 1-2 minutes. Then add the spinach and cook until leaves have wilted.
Add gnocchi and mix together.
With a pot holder or a towel, hold the squash and scrape off the top layer of seeds. Then scrape the entire inside of the squash onto your plate. Pour some of the chorizo and gnocchi juice onto the squash for extra deliciousness. Optional – top with Gouda Cheese (can substitute with parmesan)
Viola – done. Dinner on the table in under 30 minutes.
