HEALING CHINESE CHICKEN SOUP
INGREDIENTS
1 tbs sesame oil
3 minced cloves
1-2 finely sliced red chili peppers
1″ finely chopped ginger root
1/2 lb boneless, skinless chicken, chopped into 1/2 slices
5 cups chicken stock
3 tbs soy sauce
a pinch of turmeric
3 finely chopped scallions
parsley for garnish
2 tbs each oil and butter
2 tbs flour
1 cup chicken broth
DIRECTIONS
Heat sesame oil in a pan on low heat, add the garlic, chili peppers and ginger. Saute until soft and fragrant. Add 5 cups of chicken stock, soy sauce and turmeric and bring to a boil. Reduce heat and simmer for 15-20 minutes. Add scallions. In a separate pot heat the 2 tbs of oil and butter, then sprinkle flour on top and mix until combined. Slowly add 1 cup chicken broth and whisk until smooth. Add to soup for desired creaminess. Serve in bowl and garnish with fresh parsley.
