Heal Yourself With Chinese Chicken Soup

Healing Chinese Chicken Soup.  In China, a comforting bowl of chicken soup with added Asian staples, is the go-to cure for fighting colds and flu. This delicious “tonic” has been keeping generations healthy for a reason – chili peppers clear congestion, chicken keeps the lungs clear, turmeric blocks inflammation, scallions & garlic fight germs and ginger knocks out colds !!  So keep yourself cold and flu free this winter by having a bowl of this delicious “tonic”soup on a regular basis.  Enjoy 🙂

HEALING CHINESE CHICKEN SOUP

INGREDIENTS

  • 1 tbs sesame oil
  • 3 minced cloves
  • 1-2 finely sliced red chili peppers
  • 1″ finely chopped ginger root
  • 1/2 lb boneless, skinless chicken, chopped into 1/2 slices
  • 5 cups chicken stock
  • 3 tbs soy sauce
  • a pinch of turmeric
  • 3 finely chopped scallions
  • parsley for garnish
  • 2 tbs each oil and butter
  • 2 tbs flour
  • 1 cup chicken broth

 

DIRECTIONS

Heat sesame oil in a pan on low heat, add the garlic, chili peppers and ginger.  Saute until soft and fragrant.  Add 5 cups of chicken stock, soy sauce and turmeric and bring to a boil.  Reduce heat and simmer for 15-20 minutes.  Add scallions.  In a separate pot heat the 2 tbs of oil and butter, then sprinkle flour on top and mix until combined.  Slowly add 1 cup chicken broth and whisk until smooth.  Add to soup for desired creaminess.  Serve in bowl and garnish with fresh parsley.
