INGREDIENTS
Pork Chops
1 tbl Olive oil
2 Pork Chops, boneless
1 tsp Italian seasoning
1/2 tsp Garlic powder
1/2 tsp Onion powder
dash of Salt
dash of Pepper
Mushroom Cream Sauce
2 tbl Ghee (divided into 2)
1 tsp Djon mustard
2 Garlic cloves, minced
1 Shallot, minced
1 (8) oz package Mushrooms, sliced
1/2 c Chicken Bone Broth
1/3 c White cooking wine
1/2 c heavy Cream*
* (I didn’t have any heavy cream so I made my own with 1 tbls melted butter and 1/3 c low-fat milk)
Garnish – Thyme or Parsley
INSTRUCTIONS
Pat the pork chops dry with a paper towel and season both sides with salt, pepper, Italian seasoning, garlic and onion powder.
In a large skillet over medium-high heat, add olive oil. Once hot, add the pork chops and sear for 3-4 minutes on each side until golden brown. Remove the chops from the skillet and set aside.
In the same skillet, reduce heat to medium, add olive oil. Once melted, sauté the diced shallots and minced garlic until translucent and fragrant, about 2-3 minutes. Add the sliced mushrooms to the skillet, seasoning with a pinch of salt and pepper. Cook until the mushrooms release their moisture and become tender, approximately 5-6 minutes.
Pour in the chicken broth and cooking wine, stirring to deglaze the pan and incorporate any browned bits from the bottom. Let it simmer and reduce by half. Stir in the heavy cream and Dijon mustard, mixing well to combine. Allow the sauce to simmer for an additional 2-3 minutes until it begins to thicken.
Combine and Serve: Return the pork chops to the skillet, spooning the mushroom cream sauce over them. Let them simmer in the sauce for 5-6 minutes, ensuring they are cooked through and flavors meld together. Garnish with freshly chopped thyme or parsley before serving.
