INGREDIENTS1
1 boneless, skinless chicken breast (diced)
2 cups cauliflower rice
1/2 cup bone broth
1/4 cup unsweetened almond milk
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp Paprika
1/4 tsp dried Thyme
Salt and pepper to taste
INSTRUCTIONS
Preheat oven to 375°F (190°C).
In a large bowl, toss the cauliflower rice, half of the minced garlic, all of the smoked paprika, salt, and pepper. Spread the cauliflower evenly in the baking dish.
In the same bowl, combine the chicken pieces with the almond milk and bone broth, remaining garlic, all of the garlic powder and onion powder, and remaining salt, and pepper. Arrange the chicken over the cauliflower in the baking dish.
Cover with foil and bake for 25-30 minutes, or until the chicken is fully cooked. Stir and serve.
