Day 9 of The Bone Broth Diet – Baked Egg Cups with Vegetables, Green Goddess Smoothie, and Chicken Breast with Leftover Ratatouille


Bone Broth Diet – Day 9 of Weight Loss. I was really looking forward to these meals today – Baked Egg Cups with Vegetables, Green Goddess Shake, and Chicken Breast with Leftover Ratatouille. Sounds pretty yummy??? Because it was. Check it out if you still want to eat like a queen and lose some pounds.

Day 9 Menu
* Wake up – 1 c warm Chicken Bone Broth
* Breakfast – 2 Baked Egg Cups
* Lunch – Green Goddess Smoothie
* Dinner – Chicken Breast with Leftover Ratatouille
* Snack – 1 c warm Chicken Bone Broth


Bone Broth Diet – Day 9 of Weight Loss

Baked Egg Cups with Vegetables
2 Servings – 100 calories 1.6g carbs

INGREDIENTS
4 Eggs
1 c Spinach Raw, chopped
1/2 cup, Mushrooms, chopped
1 slice Onion, chopped
1/4 c chopped red Bell Pepper
1/2 tsp Nutmeg
1 pinch Salt
1 dash black Pepper
1 tbsp Coconut Oil

INSTRUCTIONS
Preheat the oven to 350°F. Brush 4 cups in a muffin pan with the melted coconut oil.

Divide the spinach, mushrooms, onion and red pepper among the cups. The spinach will likely pop up over the top of the cups until you add the eggs. For scrambled eggs, whisk the eggs together in a bowl along with the salt, pepper, and nutmeg – then pour into the cups. For whole eggs, crack 1 egg into each cup. Sprinkle with salt, pepper, and a dash of nutmeg, if using.

Bake for about 20 minutes for scrambled eggs or for 23 to 25 minutes for eggs with soft yolks. Remove from the pan and enjoy 2 cups for breakfast. Save the other 2 for tomorrow


GREEN GODDESS SMOOTHIE
1 serving – 375 calories with collagen peptides, 25g carbs

INGREDIENTS
1 cup Spinach Raw, chopped
1/2 Avocados
1/2 tsp Vanilla Extract
1 tbsp Flaxseeds
1/4 c Sunflower Seeds
1 c Organic Almond Milk Low Fat
1 scoop Collagen Peptides (70 calories)
Ice (optional)

INSTRUCTIONS
Combine all ingredients into your blender and give it a good whirl. Add ice if you desire more thickness.  I add Garden of Life Collagen Peptides to my smoothies and it’s absolutely fabulous.  Click the link if you want to grab a container.


CHICKEN WITH LEFTOVER RATATOUILLE
Makes 1 serving – 67 calories, 12g carbs for ratatouille
Add additional 130 calories and 3g carbs for chicken

INGREDIENTS
1 Chicken Breast, fillet in half
1 tsp ground Basil
1 tsp Parsley, Dried
1 tsp Oregano, Ground
1 tsp Garlic Powder
1 tsp Onion Powder
1 tbsp Coconut Oil

INSTRUCTIONS
Mix the herbs together and rub over chicken breasts. Heat oil in pan over med high heat and place breasts in the pain. Cook until browned on each side.
